SALON Champagne Salon makes no other wine other than this rare vintage, tête de cuvée Blanc de Blancs. First comes the hyper-selection of grapes: Much of Salon's extraordinary style - perfumed nose, exquisite balance, multiple layers of flavor, firm structure, tiny mousse, long-finish, etc. are determined by the grapes from three distinct micro-regions in this appellation. Salon makes the wine only in the greatest of years, when the grapes develop the ideal combination of rich fruit, sugar and high acidity. Salon uses only the first pressing, gaining the highest acidity and best quality of the grape. Salon never puts its wine through malolactic fermentation. This retains the refreshing crispness and profound depth of flavor that are the hallmarks of Salon. The 1996 vintage was made for long-lived Champagne, with the long and hot summer producing ripe grapes. Vintage 1996 (*****) "Deemed to be a great vintage, even 'the vintage of the (20th)centrury'. Producers said that they had not seen the like since 1955; certainly, they said, quality surpassed the '85 and '90 vintages. Unlike so many vintages in the first half of the 1990s, the harvest was not spoiled by rain. In fact, quite the opposite. Heavy rain occured in August but the perfect ripening conditiions wich followed in September saved the day. There has been pressure to put this vintage on the market. We shall see. I can't wait."
