PAPE-CLEMENT As we wrapped up cellar work on day three our thoughts naturally turned to what selections from the cellar should be pulled for the evening’s dinner. Herr von Staff and his wife graciously prepared a properly hearty German meal, leg of lamb, greens and potatoes. From the cellar we brought up two bottles each of 1964 Pape Clement, 1989 Beaucastel, 1993 Gevrey-Chambertin (Madame Pierre Gelin). The featured wine of the night, the ’64. Tasting note from this cellar: This late release bottling by the Château underwent reconditioning in 1993. I quite agree with the end result as the wine has not lost any of its maturity and integration. There is no impression younger wine used in the reconditioning which leads me to believe that other 1964 bottles were used as would be the tradition. The wine itself is fully integrated, mature, with soft tannins. The aromas are savory, complex and autumnal as appropriate for this age. The palate is graceful, one commented it was rather elegant (von Staff). We already had an impression that Herr von Staff was partisan towards the Pape Clement, our confirmation came from watching his wife’s favorable reaction to this sublime wine. Clearly a style of maturity enjoyed very much in this household. Remaining wines were polished off with a selection of wonderful cheeses and joyful conversation well into the evening hours. – Scott Torrence 10/1/15 at the home of Herr & Fr von Staff.
