POL ROGER, SIR WINSTON CHURCHILL No one else means more to their house than Christian Pol-Roger does. The manner in which he welcomes wine lovers in Champagne is beyond compare. Christian both looks and acts like some English aristocrat, with a dry humour that wouldn't shame Sir Alec Guinness. His joyful lifestyle is as charming and effervescent as his champagne. He loves his house, his hometown and his champagne and lets his friends share his delight. Together with Christian de Billy he runs Winston Churchill's favourite house in the same spirit as his ancestors. Christian de Billy, the son of an air force officer and his wife, born Antoinette Pol-Roger, is an affable greying man of about sixty. He is perfectly suited to the role of guardian of the temple. The house was founded in 1849 by Pol Roger, who was succeeded by his sons Maurice and Georges. At the turn of the century the Roger family changed its name to Pol-Roger. Maurice was the mayor of Epernay during the weeklong occupation of the town by the Germans in September 1914. Despite the German threats to shoot him and burn the town, he remained ramrod-straight and later hailed as a hero of his town. He was voted honorary mayor for life. England has always been the main export market for Pol Roger, and when Winston Churchill died the wine's label was black-edged in his memory. When the period of mourning was deemed to be over, the 1975 Cuve Sir Winston Churchill was launched, in magnums only. The wine is made in a style they believe Winston would have appreciated. His favourite vintages were 1928, 34 and 47. Today the firm owns 85 hectares of vineyards, most of them close to Epernay: Mardeuil, Chouilly, Pierry, Moussy, Chavot, Cuis, Cramant and Grauves. They meet 45 of the firm's needs, and the rest is taken from Pinot villages to give the wine backbone. Pol Roger's vinification is quite normal, which leads me to the conclusion that the secret lies in the quality of the grapes and above all the skill of James Coffinet in assembling the cuve. The wines are medium-bodied with a lovely fruity balance and perfect dosage. The mousse is exemplary, with smaller bubbles than usual because of a cellar temperature half a degree below the average.
