Green Chartreuse, Vieillissement Exceptionellement Prolongé --Vintage 1972

Chartreuse Somewhere in the small town of Voiron, high in the Chartreuse Mountains of eastern France, lies the age-old secrets of Chartreuse. In 1605 a recipe was passed to the Carthusian monks of the Grande Chartreuse monastery as an "elixir" for long life. Due to the political turmoil over the centuries, the monks were expelled from their monastery numerous times, and the formula almost lost on more than one occasion. Much chartreuse produced during the 20th century can be identified as 'Tarragona', referencing the distillery in Spain where the monks took refuge for several years. The naturally green liqueur is a distilled spirit flavored with 130 herbal extracts with its coloring coming from chlorophyll, however a yellow form of the spirit is also produced which has a milder and sweeter character. The very sweet yet potent nature of Chartreuse has led to the tradition of serving it mixed with tonic or on the rocks and due to the array of herbs it can turn both spicy and pungent. Only two of the monks at one time know the identity of the 130 herbs and the intricacies of how to distill and prepare the mixture.
