CHÂTEAU CHEVAL BLANC AND PETIT CHEVAL Famously well-proportioned with 57 Cabernet Franc (the remaining recipe of the plantings being 39 Merlot, 3 Malbec and 1 of Cabernet Sauvignon), Cheval Blanc is the undisputed leader in St. Emilion. The soil structure is incredible varied with gravel and clay meeting sand and sedimentary rock. The wine is aged for 18 months in new oak barrels. Château Cheval Blanc was among the first properties to improve the quality of their wine by being more selective about the grapes that are used, a process that is now quite common. A château will make their top wine, which they call the grand vin with the best fruit and in exactly the proportions of each grape variety desired. The fruit that is not selected will be put to other uses. At Cheval Blanc there is a second wine that is made which is called Petit Cheval. This wine, a masterpiece in its own right, is consistently done in a style similar to the grand vin but requiring less aging before it is ready to drink. The estate also produces a third wine, labeled simply as St.-Emilion which is very good value for money. This same procedure is practiced at many top châteaux, for example at Château Latour and Château Margaux. Château Cheval-Blanc--Vintage 2008 Saint-Emilion, 1er grand cru classé (A). Château-bottled Amazing wine. Assembled from half Merlot and half Cabernet Franc, the grand vin is a deep, inky black in color, and shows a rich, perfumed nose with blackberry fruit and hints of licorice, spice, and mineral. On the palate the wine has a firm grip and lots of tannin, but a very finely-grained tannin of great sophistication and beauty. Great length V a great success." CC, April 2009 1 impériale per lot
